Ask any Gorakhpuri what they miss most when they travel — after family and the famous chaat — and they'll almost certainly mention namkeen. These crispy, spiced savoury snacks are woven into the fabric of daily life in eastern Uttar Pradesh.
The Classic Namkeens
Bhujia (₹120/250g) — The undisputed king of namkeens. Made from besan extruded into fine noodles and deep-fried. The best bhujia is dry, crispy, and absolutely addictive.
Mixture (₹120/250g) — The democracy of namkeens — bhujia, fried chana dal, puffed rice, groundnuts, and fried lentils tossed in spices. Every mouthful is different.
Sev (₹120/250g) — Available in fine and thick varieties. Eaten as a snack, used as a topping on chaat, or sprinkled over rice dishes.
Mathri (₹120/250g) — Small, flaky, layered crackers deep-fried to a golden crunch. They keep well for weeks and pair beautifully with pickles or chai.
The Chai Pairing Rule
There is one unbreakable rule in Gorakhpur: namkeen with chai. A cup of strong masala chai with a handful of bhujia or mathri is the ultimate Gorakhpuri afternoon ritual.
